In Tenerife there are several artisans, including Belio Acosta Castañeda, who manufacture these highly valued handcrafted tools. Canarian knives and letter openers are entirely handmade: both the blade, forged in the smithery, and the handle are crafted by hand.

The handle of a Canarian knife is the most striking element of the tool and the component that proves the most difficult to make. The handle is crafted from pieces of cow's bone and ram's horn on which various designs are carved using sheets of aluminium or other metals.
