Potaje de verduras (vegetable stew)
Using a pestle and mortar, crush the garlic and parsley and season with salt according to taste. Add oil to the mixture. Fill a large pot with salted water and bring to the boil. Chop and add the pumpkin, green beans, the leek, the carrot, the potatoes, the corn cob and the courgette. Boil the vegetables until they are thoroughly cooked.
