Papas arrugadas (a form of jacket potato)
- 1 kilogram of potatoes
- Coarse grained salt
Wash the potatoes thoroughly and place them in a copper. Attempt to ensure that the potatoes are roughly the same size to ensure that they require similar cooking times.. Cover the potatoes with water and add a fair amount of salt. The potatoes will absorb exactly the right amount of salt. Boil the potatoes for 25 minutes. Check the firmness of the potatoes with a fork. When they are nearly done, drain off the water. Allow the potatoes to cook for another few minutes until they dry out, carefully moving them to prevent them from burning.
Serve on a tray accompanied by mojo picón.
